Triple Silken Pumpkin Torte provide an alternative to the traditional single layer pumpkin pie.  This elevated dessert consists of a rich pumpkin custard layer flavored with brandy (or rum), sour cream, and heavy cream. This serves as the substantial base of the dessert, a layer of whipped cream enriched with crème fraîche and flavored with maple sugar. This adds a light, tangy, and slightly sweet element, and a caramel-pumpkin mousse layer provides a light, airy texture and a sophisticated, slightly bitter caramel note that balances the sweetness of the other components.

Pastry Gail’s Mile High Apple Pie is a takes it one step further on the classic American dessert.  This delight is a tall heap of cinnamon spiced apples nestled in a rich caramel sauce within a flaky buttery all-butter double crust.  

This delightfully tart pie is an autumnal twist on a classic lemon meringue. Bright, tangy citrus curd is topped with cranberry Swiss meringue.

Our small batch artisan peach pies are hand crafted with love and care using the finest ingredients – organically grown heirloom Elberta peaches from Village Farms, European butter, and more!

What makes Elberta peaches so special?  First, they are sweet and juicy with a refreshing taste that is not too sweet.  Elbertas have disappeared commercially making them a rare find, for the exception of an occasional farmers’ market discovery.  They are open-pollinated and have been preserved and passed along for generation in their pure form. They are healthier because they are organic and carcinogen free!
